Just a short post today about my own creations. For christmas day: Gluten free Christmas Cookies!
We have tried to use our old and loved recipe for cinnamon stars and make it gluten free. We tried last year, the year before that, but this year it finally worked! They might not be star shaped but that doesn’t affect the taste at all.
Here’s the recipe:
GLUTEN FREE Cinnamon Cookies
- 2 tbsp ground chia seeds
- 8 tbsp water
- 250g ground tigernuts
- 250g ground walnuts
- 100g coconut-sugar
- 50g brown sugar
- 2 tbsp cinnamon
- 2 tsp Weinstein-backing powder
- 1/4 tsp salt
- 2 eggs (yolk/white separately)
- powdered sugar
Preheat the oven at 160°C and line a baking tray with baking parchment.
Mix the chia seeds, water and the ground nuts together. Then mix the sugar, cinnamon and baking powder, before adding that to the main bowl. Separate the egg yolks from the egg white and add the salt to the egg white. Then mix it into the dough.
Knead it with your hands and form a big lump. Make 2x2cm big spheres and set them on the baking tray. When everything is done take a table spoon and press the spheres down into tiles. If the dough sticks to the spoon, wet it with a little water.
Bake it on the middle rail for 6 minutes, then brush them with the egg yolk. Afterwards bake them again for 8-10 minutes.
Dust them with powdered sugar as soon as they’re out of the oven.
Even as a last minute idea these gluten free christmas cookies are great, because they only need 30 minutes to be made, including baking.
